Roasted Asparagus with Pine Nuts

The original recipe called for toasted almonds. Interesting, we thought, but we went instead with the pine nuts. We're sticking to that story.

Note that we "roast" pine nuts by heating a small, dry frying pan, adding the pine nuts, and cooking them for a couple of minutes atop the stove.

1 lb. asparagus 2 cloves garlic, minced
3 T. olive oil salt and freshly ground black pepper to taste
3 T. toasted pine nuts  
  1. Preheat the oven to 350o.

  2. Trim and rinse the asparagus. Mix the garlic, olive oil, and spices. Place the spears on a flat baking pan, pour over them the garlic-oil mix, and toss to coat with one hand.

  3. Move the pan to the preheated oven. Cook until the asparagus are tender, approximately 10 minutes.

  4. When the asparagus is ready, move it to a serving dish, sprinkle with the pine nuts, and serve.
